No Bake Cookies

As a person who is always last minute, No Bake Cookies are the perfect cookies for those last minute holiday baking commitments. These are one of my favorite holiday desserts, and I hope to everyone who decides to make them, they become their favorite too. These cookies combine chocolate and peanut butter in one of the most delicious ways with a sure unique texture. And the best part is you don’t have to wait for them to cook or worry about burning them. 

This recipe is a family recipe classic and is so easy to make, but a few tips may be able to help for first time makers. These cookies have a base of mostly sugar, they are actually more of a candy than a cookie, and because of this the sugar has to be able to solidify. If the sugar is not boiled for long enough the cookie will be more of a floppy pancake. First tries of these cookies are never the best, it takes time to build technique, so if your cookies don’t quite hold their shape don’t worry they are still delicious. The best tip I can give is to boil it until you have a bit of a panic attack about the sugar boiling over, then you know it’s ready. Another tip I have is even though the classic recipe says you can add nuts, don’t. Nuts, in my opinion, are the perfect way to ruin a perfectly good cookie. These cookies are perfectly good kept simple. 

This desert is the perfect thing to bring to your next family or friend event to add a little something sweet. Perfect to make for the holidays or just for fun it’s sure to be a favorite. I would say happy baking but…happy boiling!

 

Ingredients:

 

2 C. white sugar

 

½ cup butter

 

2 T. Peanut Butter

 

½ C. Milk

 

2 T. Cocoa

 

1 tsp. Vanilla 

 

3 C. Quick Oatmeal 

Combine sugar, butter, and milk in a sauce pan and bring to a boil. Remove from heat and add cocoa, vanilla, and oatmeal. Drop globs onto wax paper or parchment. Nuts may be added.
